Fine Dining Douglas Hyde Restaurant.
We would like to introduce you to Kate Wellsby, a native of Warrington in the Northwest of England. Kate moved to Ireland in 1991 where her passion for horticulture took over and she gave up her career in Social Care.
Working as a local gardener and later been promoted into Head Gardener, Kate learnt the craft of Commercial Gardening.
After joining the team in Kilronan Castle and working alongside our Executive Head Chef, Daniel Willimont, Kate has taken complete control of the Walled gardens at Kilronan Castle and its her enthusiasm, knowledge and inspiration that has developed the dynamic and vibrant garden that we are proud to have today.
With the assistance of Junior Sous Chef Lauma Jurkane and Franek Rykowski the team grow and supply many of the seasonal vegetables, fruits and flowers that are used in the creation of dishes at Kilronan Castle.
